SUSTAINABLE BUTTERIES PROJECT

A 4-pronged plan to GREEN-ify college butteries.

ABOUT

During the 2018 - 2019 school year, GREEN embarked on its first-ever project to improve the sustainability of all 14 butteries on campus. Before approaching each college, we developed the Plant-based Buttery Cookbook and Better Buttery Guide (both below) to aid butteries in their transition. Thereafter, we piloted in Pierson, Silliman and Berkeley college in Fall 2018, then the remaining colleges in Spring 2019. Finally, we culminated the project by hosting the Sustainable Buttery Showcase, of which 11 colleges participated.  

To institutionalize these changes, we worked with the Office of Sustainability to create a standardized Sustainability Rating Sheet for all butteries to use. Beginning Fall 2019, butteries will annually rank their sustainability using an online form and obtain a sustainability rating of 1 to 4 stars. They are also encouraged to hang a plaque in their buttery to showcase their rating.   

The Sustainable Buttery Project will be passed onto the Sustainability Liaisons of each college in Fall 2019.
